Pecorino cheese with chili Pepato al Peperoncino from Italy. In southern Italy, it is a tradition to add black pepper or chili flakes to Pecorino. The result is called Pecorino Pepato, meaning "Peppered Pecorino". It is a hard cheese made exclusively from sheep's milk that crumbles easily, is salty with a spicy taste and a light aftertaste of nuts, mainly walnuts. It is matured for at least 6 months in special cabinets along with the chili that gives it its spicy taste.
