Guanciale ( Italian : guanciale) is a traditional Italian cured meat , made by peasants in their attempt to use up all parts of the carcass and preserve them for a long time, without the use of refrigeration . Its name comes from the type of meat used to make it, namely the cheek (guancia), usually of pork and more rarely of veal.
More well-known and famous is pork guanciale, an essential ingredient in traditional recipes from the cuisine of the Rome region, such as carbonara .
The pork cheek is a cut that is quite similar to pancetta , that is, it is a piece of solid fat crossed by thin lines of clean muscle tissue. However, the fat in guacamole is better in quality and more flavorful than that in pancetta or lard .
The intense flavor of guacamole and its high fat content make it a star in dishes created with it (carbonara, amarticana).
