Bresaola is a traditional cold cut made mainly in Northern Italy from mature lean beef. It can be made from the leg and mainly from the sirloin, which is where its name comes from. It is aged for at least 3 months with salt and herbs, until it takes on its characteristic dark color, hard texture and intense aroma and flavor. Because it is usually made from lean meat, it has less fat than other cold cuts.
Bresaola Black Angus is a specialty produced with the best meat from the Black Angus breed of Scottish origin.
