 Monte 27 Cheese from Italy, aged for 12 months. Monte 27 is a cheese made with pasteurized cow's milk and has a dark brown rind and a more or less deep yellow pulp depending on the season of production. Its texture is solid, without holes, ideal for breaking into flakes or grating. On the nose and in the mouth it offers scents and aromas of milk, hay and grass, meat broth, as well as herbal, toasted and spicy notes. The taste is a perfect balance between sweet, salty and sour.
