Parcharotyr is a cheese made from fresh, semi-skimmed cow's milk and rennet from a milk calf. It is smoked with aromatic herbs that mildly characterize its flavor. The cheese matures for at least 1 year. The Rayan company aims to keep the treasure of Pontic recipes alive as a legacy for future generations.
