An easy and quick recipe with the unique Miran soutzouki to enhance the flavor

materials
1 traditional Miran petalo soutzouki
2 Handmade Tagliatelle With Black Truffle
Tomato Sauce With Basil selection Miran
1 onion
1 garlic
fresh mint
orange zest
1 glass of MOSCHOSTAFYLOS White Wine
Skyros Mizithra Cheese
Preparation
In a large, deep pan, sauté the chopped onion.
Add the soutzouki in large slices and the garlic and sauté on all sides over medium heat.
Once the soutzouki is golden brown, deglaze with the wine and let the alcohol evaporate.
Add the tomatoes, after first grating them and the orange zest.
With the lid closed, let our sauce boil over medium heat and thicken.
Boil the tagliatelle in plenty of salted water, for half the time indicated on the package.
Once the time is up, add them directly to the pan with our sauce and the soutzouki and a fork.
Increase the heat and with a ladle add the water that we boiled the tagliatelle in, as much as needed to provide moisture and boil the tagliatelle.
Stir constantly so that the sauce gets everywhere.
Once the total time it takes for the tagliatelle to boil has been completed, remove from the heat and add a little olive oil and some chopped parsley.
Serve while it is still hot.
