This wonderful Italian pasta with authentic Guanciale and Pecorino With Truffle, Miran's selection.

materials
160 g Pasta of your choice
120 g authentic Italian Guanciale Miran, cut into cubes
100g Pecorino Cheese With Truffle Meliterno selection Miran, grated.
2 egg yolks
1 clove of garlic
pepper
Preparation
Boil our pasta for the time indicated on the package (reserve 1 large cup of the water they boiled in)
In a deep pan, sauté the diced Guanciale and the chopped garlic with a little olive oil.
In a deep plate, beat the egg yolks, slowly adding the water from our pasta (about 2 tablespoons).
Add more of the Pecorino Cheese with Truffles (approximately 80g) and mix well.
In the pan where we sautéed the Guanciale, add the pasta and mix well over medium heat.
Remove the pan from the heat and add the egg yolk mixture and the Pecorino with Truffle and stir, gradually adding a little more water from the pasta cooking water until it becomes a nice sauce.
Place on the fire for 15'', stirring well.
Serve with freshly ground pepper and a little more grated Pecorino With Truffle.
