Batzos Cheese of Sochos. Batzos is a traditional brine cheese, semi-hard to hard, white to whitish-yellow, without a rind, with irregular holes throughout the mass of the cheese. It is made from goat and sheep milk and has a pleasant sour, slightly spicy and very salty taste. Batzos is consumed fried in a pan or grilled, grated on pasta, in salads and dishes and fried in eggs. It is one of the oldest Greek cheeses that was produced in the sheepfolds by shepherds.
