Andros Ladotyr Cheese. A very interesting hard cow's cheese from Andros. Made from the milk of local cows, it matures for forty days in a cool place, 15 days in oil and develops its spicy flavor and special aroma. Then "wrapped" in herbs gathered from the Andrian land, it is enriched with their distinctive aromas and invites you to eat it plain with fresh royal figs and later, which will not be available with dried ones, but also grated or in pieces in a simple pasta dish.
